Sesame Ginger Noodle Salad with Shrimp:
Ingredients:
For the noodle salad:
- 8 ounces soba noodles or rice noodles
- 1 tablespoon vegetable oil
- 1 pound large shrimp, peeled and deveined
- Salt and pepper, to taste
- 2 cups shredded Napa cabbage
- 1 red bell pepper, thinly sliced
- 1 cup shredded carrots
- 1/4 cup chopped cilantro or parsley
- 2 green onions, thinly sliced
- Sesame seeds, for garnish
Instructions:

In a small bowl, whisk together all the ingredients for the sesame dressing until well combined. Adjust seasoning with salt and pepper to taste. Set aside.

Cook the soba noodles or rice noodles according to the package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.

Heat the vegetable oil in a large skillet over medium-high heat. Season the shrimp with salt and pepper, then add them to the skillet. Cook for 2-3 minutes on each side, or until pink and cooked through. Remove from heat and set aside.

In a large mixing bowl, combine the cooked noodles, shredded Napa cabbage, sliced red bell pepper, shredded carrots, chopped cilantro or parsley, and sliced green onions.

Add the cooked shrimp to the bowl with the noodle and vegetable mixture.

Pour the sesame dressing over the salad and toss until everything is well coated.
