Ingredients:
For the salmon:
- 4 salmon fillets
- Salt and pepper, to taste
- 2 tablespoons olive oil
For the stir-fried vegetables:
- 2 tablespoons olive oil
- 2 cups mixed vegetables (such as bell peppers, broccoli, snap peas, carrots, and mushrooms), thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- Salt and pepper, to taste
- Sesame seeds, for garnish (optional)
- Sliced green onions, for garnish (optional)
Instructions:

Preheat the oven to 375°F (190°C).

In a small bowl, whisk together all the ingredients for the ginger dressing until well combined. Set aside.

Season the salmon fillets with salt and pepper on both sides.

Heat 2 tablespoons of olive oil in an oven-safe skillet over medium-high heat. Once hot, add the salmon fillets, skin side down, and cook for 3-4 minutes until browned and crispy. Flip the fillets and cook for an additional 2 minutes.

Pour the ginger dressing over the salmon fillets, making sure they are evenly coated. Transfer the skillet to the preheated oven and bake for 8-10 minutes until the salmon is cooked through and flakes easily with a fork.

While the salmon is baking, heat 2 tablespoons of olive oil in a large skillet or wok over medium-high heat. Add the mixed vegetables, minced garlic, and grated ginger. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.

Season the stir-fried vegetables with salt and pepper to taste.

Once the salmon is cooked, remove it from the oven and let it rest for a few minutes.

Serve the ginger glazed salmon fillets with the stir-fried vegetables on the side. Garnish with sesame seeds and sliced green onions, if desired.
